St. Patrick’s Day may have have been last week, but keep thinking GREEN! Hold the mindset of consuming more green foods, as it’s one of the most important (and easiest!) ways to improve your health. Green vegetables are packed with vital nutrients, fiber, low in calories, and contrary to the widely held belief, delicious. Simple ways to get these foods into your diet is as easy as adding a side of vegetables to your meals, throwing leafy greens into a smoothie with frozen fruit, or tossing a handful of the healthy stuff into sauces or soups. Peruse the farmer’s markets for the freshest selection, but these amazing vegetables are available at any major market. Try buying what’s in season to experience the foods at their peak.
Here’s a tasty sandwich recipe found on Two Peas & Their Pod. Take a can of chickpeas, mash together with a large avocado, add in chopped cilantro & green onion, salt & pepper, and top with a generous portion of spinach, watercress, or sprouts. Sandwich between whole wheat (or a gluten-free) bread, and viola! Trust me, your taste buds will thank us.
